Fluffy Buttermilk Pancakes with Coconut Syrup

I can't even begin to tell you how much I love these pancakes. They are so fluffy and perfect that I can eat several platefuls in one setting. I normally eat them for breakfast, snacks, lunch, and sometimes even dinner if there are any left. I'm serious. They are that good. I think my favorite part is the homemade coconut syrup though. I'm not even a huge coconut fan, but this syrup is divine. Just try it. You won't regret it.

Buttermilk Pancakes

Sift together:
1 3/4 c. flour
4 Tbsp. sugar
1 tsp. salt
1 tsp. soda
1 tsp. baking powder

Add and mix well:  
3 Tbsp. butter, melted
2 c. buttermilk ( you can add more if it seems too thick)
3 eggs yolks--set whites aside

Beat egg whites until stiff, then very gently fold into batter. (Do NOT overstir! You want to still be able to see the egg white foam in the batter. I normally only stir a few times to distribute the egg whites.)

Cook on hot griddle and enjoy! 

Coconut Syrup

1 c. sugar
1 stick butter
1 c. buttermilk

1 tsp. baking soda
1 tsp. coconut extract 

Heat first 3 ingredients on stove top JUST until boiling.  The minute it starts boiling, stir in last two ingredients and remove immediately from heat. ( It will bubble up and expand.)  Yum.
